How to Make Apples a Healthy Dinner Side

I used to think having a side dish that takes 5 minutes to make, tastes delicious and includes veggies was a pipe dream, until I found this little gem.

With it being Apple picking season I thought it was time to share my favorite easy healthy side dish.

Warm Apple-Cabbage Slaw

I'm going to make this simple for you where you only have to slice an apple.

Ingredients
1 bag cole slaw mix
1 apple, thinly sliced
1/4 cup water
cider vinegar, to taste

Yep, just cheap cole slaw mix (no mayo, it's simply the cabbage and carrots)


Directions
Place cole slaw mix, sliced apple and water in a medium skillet, heat on medium low, cover and cook until tender. 

Stir in cider vinegar to taste and serve

The finished product in the pan after 5 minutes of cooking

That's a Real Baby!

Darren and I got to see our little baby this week! He/she is measuring 13 weeks and 1 day and everything looked healthy. This picture cracks me up because the baby looks like it's pouting because we woke it up.  We did though, the tech was pushing on my belly like I do when I'm trying to get into pair of jeans that are too small!  Baby Hawk wouldn't move! To Stella

I thought it would be fun to write a letter to you before I met you. We could read it together later and laugh about how clueless I was about you! Dear Stella, It's Christmas 2011 and I honestly haven't thought at all about the holiday this year.  All I can think about is March, when I get to meet you for the first time.  Your Dad and I went to the hospital this week to check out where you would be born! 2012 Highlights

So I'm obviously abandoning my attempt to try to capture every Saturday in Stella's life. I now realize that's impossible. Plus, not everything in the world happens on a Saturday. It's the fun/sad/crazy moments that are the ones you want to remember right? (by sad I mean "my baby's growing up" sniff sniff)  And those usually happen on a random Tuesday or something.
